How to Make Apple Cinnamon Oatmeal Cookies

Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.

In a large bowl, whisk together 2 cups old fashioned roll oats, 1 1/4 cups flour, 1/2 tsp baking soda, 1/2 tsp salt, 1 tsp cinnamon, 1/2 tsp allspice, and 1/4 tsp nutmeg. Set aside.

In a separate bowl, beat together 1/2 cup softened butter, 1/2 cup sugar, and 1/2 cup brown sugar until smooth and creamy.

Add in reduced applesauce, 1 egg yolk, and 1 tsp vanilla and beat until combined.

Beat in dry ingredients until well combined.

Fold in 3/4 cup diced apples.

Scoop 1 1/2 tbsp size balls and place onto the prepared pan, leaving enough room between the cookies to spread.

Bake for 14-15 minutes, or until lightly browned and set around the edges.

Remove from the oven and let cool on the pan for 5 minutes. Transfer to a cooling rack.

Once all of the cookies are baked and cooled, make the icing by melting 2 tbsp butter and 1/3 cup maple syrup together in a small sauce pan over low heat. Whisk occasionally.

When the butter has melted, remove from the heat and whisk in 1 cup powdered sugar.

Drizzle over cookies. The icing will set after about 1 hour.
