We have been enjoying the most beautiful Fall weather! The colors are changing, the sun is shining, the breeze is cool – it’s been the very best baking weather!
I decided to step away from my computer and just bake away the day. I absolutely love baking with the windows open while the bright sun shines in and the breeze blows through! I am at the peak of happiness when perfect Fall weather meets Fall baking, especially when the house smells like these Caramel Apple Cider Cookies!

Ingredients You’ll Need
1/2 cup Butter (Softened) – Adds richness, moisture, and a tender texture.
1/2 cup Sugar – Sweetens the cookies and helps create a soft, chewy crumb.
5 packets Apple Cider Mix – Provides concentrated apple flavor and sweet Fall spice notes.
1 Egg – Binds the ingredients together and adds structure.
1/2 tsp Vanilla – Enhances the overall flavor and compliments the apple and caramel.
1 1/2 cups Flour – Forms the base of the cookie dough and provides structure.
1/2 tsp Baking Soda – Helps the cookies rise and spread slightly.
1/4 tsp Baking Powder – Adds a little extra lift for a softer texture.
1/2 tsp Cinnamon – Brings warm, cozy spice flavor that pairs perfectly with apple cider.
1 cup Kraft Caramel Bits – Melt into pockets of sweet, buttery caramel throughout the cookies.

How to Make Caramel Apple Cider Cookies
Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
In a large bowl, cream together 1/2 cup softened butter, 1/2 cup sugar, and 5 packets apple cider mix until well combined.
Add in 1 egg and 1/2 tsp vanilla and beat until well combined.
In a separate small bowl, whisk together 1 1/2 cups flour, 1/2 tsp baking soda, 1/4 tsp baking powder, and 1/2 tsp cinnamon.
Beat dry mixture into the wet ingredients until cookie dough forms.
Mix in 1 cup Kraft Caramel Bits.
Scoop 1 1/2 tbsp size cookie dough balls and place onto prepared baking sheet, leaving room between the cookies. Bake for 11 minutes.
Use Fresh Caramel Bits – Fresh caramel bits melt better and create gooey pockets of caramel in every bite. I recommend using Kraft brand.
Don’t Overbake – Remove the cookies when the edges are lightly golden brown and the centers still look slightly soft. They will continue to set as they cool.
Reshape Cookies with a Spatula After Baking – Gently push the edges of each cookie inward. Work your way around the cookie, nudging any uneven sides toward the center to create a round shape.
