How to Make Quick Cherry Coffee Cake
Preheat oven to 375 degrees. Spray 9 x 13 pan with non-stick spray and set aside.
In a medium size bowl, combine 2 cups flour, 3 tsp baking powder, 1 tsp salt, 1/2 cup sugar, 2/3 cup shortening, and 1 cup milk. Mix together until the dough feels like sticky biscuit dough.
Spread into bottom of prepared pan evenly, bringing some of the dough up the sides of the pan to contain the pie filling.
Cover the dough with 2 (21 oz) cans of cherry pie filling. The filling should not touch the sides of the pan.
Using the same bowl, mix 1/4 cup butter, 1/2 cup sugar, 1/2 cup flour, and 1/8 tsp vanilla together with a fork until crumbly. Sprinkle over cherry pie filling.
Bake for 35-40 minutes, or until the streusel is golden brown.
Remove from oven and let cool.
Combine 1/2 cup powdered sugar with 1/2 tbsp milk to form icing, then drizzle over the coffee cake.
Use Pie Filling of Your Choice – You can use any fruit pie filling you’d like in this recipe!
