A one-bowl, 5-ingredient delicious chewy vegan brownie cookie loaded with chocolate in every bite!
Over the past couple of weeks I have been a cookie baking machine. I have been on a mission to spread as much baked love as possible with cookies to all of my local friends and family. In the process, I tested, tested, quality tested, and tested some more until I got the perfect Vegan Chocolate Brownie Cookie!

Vegan Vanilla Yogurt
Vegan Chocolate Chips
How to Make Vegan Chocolate Brownie Cookies
Preheat oven to 350 degrees. Line cookie sheet with parchment paper and set aside.
Pour 1 box of Devil’s Food Cake Mix into a bowl.
Add 1 tbsp flour. Mix well.
Add 1/2 cup vegan vanilla yogurt & 1/2 cup oil. Mix well.
Add 1/2 cup vegan chocolate chips. Mix well.
Scoop into 1 inch balls and distribute evenly on the parchment paper lined pan.
Press additional vegan chocolate chips into the top and side of the cookie dough balls.
Bake for 10 minutes. Remove from oven and let cool for 5 minutes. Then transfer cookies to a cookie sheet to finish cooling.

Tips for Making Vegan Chocolate Brownie Cookies
Gently push the chocolate chips into the outside of the cookie dough ball before baking, don’t just set them on the dough. Pushing them in gently will help them to bake into the cookie.
The cookies may seem underdone when you remove them from the oven, but they’re not. Just let them completely cool. You want the cookies to have the chewy texture of a brownie, so over baking them will ruin the taste and texture of the cookie.
Also, you don’t have to make these vegan. You can easily swap the vegan yogurt for 2 eggs and use real chocolate chips!
If you use 1 container of Silk Vanilla Yogurt, you’ll have just the right amount for the cookies!
