No Bake Reese’s Peanut Butter Granola Bars!

I have the most ridiculous way of making notes for myself. I never actually remember the stuff I tell myself to remember, so I started writing it down. I literally taped a piece of paper to the wall behind my desk and scribble on it when I have something that I want to remember to share with you.

Except… my notes are so short like… ‘sit & stand.’ What does that even mean?! I am writing down the stuff I want to remember and I can’t remember what the note actually means! Help me.

I don’t understand myself some days. I am over the top organized in some areas and a dumpster fire in others. Just tell me you can relate and that everything will be just fine!

If you’re a fan of peanut butter, get ready to meet your new favorite snack. These Homemade Reese’s Peanut Butter Granola Bars combine chewy oats, crispy rice cereal, creamy peanut butter, and plenty of Reese’s candy for a sweet treat that’s perfect for lunchboxes, after-school snacks, or satisfying a late-night craving!

The best part? These bars are incredibly easy to make and require just a handful of pantry staples. No complicated steps, no fancy equipment, just delicious peanut butter goodness in every bite!

Why this Recipe Works

The Brown Sugar, Peanut Butter & Honey Act as Glue – When heated together with butter, they create a sticky mixture that binds the oats and cereal without making the bars dry or crumbly.

Quick Oats Provide a Chewy Foundation – They absorb the peanut butter mixture and give the bars their classic granola bar texture while adding heartiness.

No Baking Helps Preserve a Soft, Chewy Texture – Chilling the bars instead of baking them keeps the oats tender and prevents the sugars from hardening.

Ingredients You’ll Need

1/3 cup Brown Sugar – Adds sweetness and helps binds the bars together.

1/4 cup Peanut Butter – Provides rich peanut butter flavor and contributes to the chewy texture.

1/4 cup Honey – Acts as a natural sweetener and helps hold the ingredients together.

4 tbsp Butter – Adds richness and helps create a soft, chewy consistency.

2 cups Quick Oats – The main base ingredient, providing texture and hearty whole grain goodness.

2/3 cup Rice Krispies – Adds a light, crispy crunch to the bars.

3/4 cup Reese’s Peanut Butter Chips – Delivers extra peanut butter flavor and sweet peanut butter morsels throughout.

1/2 cup Reese’s Pieces – Adds colorful candy coated peanut butter pieces for sweetness, texture, and a classic Reese’s taste.

How to Make Reese’s Peanut Butter Granola Bars

Line a 8 x 8 pan with parchment paper.

Combine 1/3 cup brown sugar, 1/4 cup peanut butter, 1/4 cup honey, and 4 tbsp butter in a medium sauce pan over low heat, stirring frequently.

Bring the mixture to a boil, then continue cooking for an additional 2-3 minutes stirring constantly.

Remove from heat.

Stir in 2 cups quick oats and 2/3 cup Rice Krispies until evenly coated.

Let mixture cool for 5 minutes.

Once the mixture has cooled slightly, fold in 3/4 cup Reese’s peanut butter chips.

Press into prepared pan.

Press 1/2 cup Reese’s Pieces, and additional peanut butter chips if desired, into the top of the mixture.

Let bars completely cool before cutting.

Heat Gently – Melt the brown sugar, peanut butter, honey, and butter gently over low to medium heat. Be careful not to boil the mixture for longer than 2-3 minutes; that will make the bars too hard.

Chill Before Cutting – Refrigerating for 1 hour will speed up setting the bars firm enough to cut.

Use a Sharp Knife – Make sure to use a sharp knife to cleanly cut the bars; a dull knife will cause the bars to crumble.
