Ingredients You’ll Need for the Muffins
1 1/2 cups Flour – Forms the base structure of the muffins.

2 tbsp Milk – Helps thin the batter for the right consistency.
1 1/4 cup Peaches (Peeled & Diced) – Adds juicy texture and classic Peach Cobbler flavor.

6 tbsp Sugar – Sweetens the topping.
4 tbsp Butter (Softened) – Creates a soft, crumbly texture.
2/3 cup Flour – Forms the base of the crumble.

How to Make Peach Cobbler Muffins
Preheat oven to 425 degrees and line a muffin pan with muffin liners.
Peel and dice enough peaches to equal 1 1/4 cups.
In a medium size bowl, mix together 1 1/2 cups flour, 2 tsp baking powder, and 1/2 tsp cinnamon. In a separate bowl, whisk together 1/2 cup oil and 3/4 cup brown sugar. Whisk in 2 eggs, then add 1/2 cup vanilla yogurt and 1 tsp vanilla until just combined. Stir in 2 tbsp milk.
Fold in 1 1/4 cup prepared peaches.
Divide batter evenly between the 12 muffin liners.
Make crumb topping by pulsing 6 tbsp sugar, 4 tbsp softened butter, 2/3 cup flour, 1/2 tsp salt, and 1/2 tsp cinnamon in a food processor.
Divide the crumb topping evenly by sprinkling on top of the batter, making sure to use all of it up.
Bake for 5 minutes, then reduce the oven temperature to 350 degrees and bake for 16 minutes.
Measure Flour Correctly – Too much flour will make the muffins dry.
Don’t Skip the Crumb Topping – The buttery streusel is what gives these muffins that true cobbler feel, adding both flavor and texture contrast.
Don’t Overbake – A toothpick inserted into one of the muffins should come out with moist crumbs. Overbaking will create dry muffins.
