If this is what living in the south tastes like, then count me in! Except, the south is humid and doesn’t get cold enough to kill Jurassic Park size bugs. So… I’ll just stay right where I am and enjoy these fresh peaches in the comfort of my own deck while the breeze blows, the birds chirp, and the kids laugh and play! It just doesn’t get any better than that.

I wish I could somehow convey the smell and taste of this deliciousness! The sweet smell of this Peach Cobbler will smell up your whole house. And the cakey topping layer combined with the juicy peaches is absolute perfection!

Ingredients You’ll Need

4 cups Peaches (Peeled & Sliced) – The star of the dish, providing juicy, sweet fruit flavor in every bite.

2 tbsp + 1 cup Sugar – Sweetens both the peaches and the batter, enhancing the natural peach flavor and creating a lightly caramelized finish.

1/2 cup Butter (Softened) – Adds richness and helps create a tender, golden cobbler topping.

1 cup Flour – Forms the base of the batter, giving structure to the cobbler.

1 tsp Baking Powder – Helps the batter rise, creating a soft, cake-like topping.

1 Egg – Binds the ingredients together and adds richness to the texture.

1 tsp Vanilla – Enhances the overall flavor and complements the sweetness of the peaches.

How to Make Peach Cobbler

Preheat the oven to 350 degrees. Spray a 8 x 8 baking dish with non-stick spray and set aside.

Slice and peel enough peaches to make 4 cups. Spread evenly in the bottom of the prepared pan. Sprinkle 2 tbsp sugar over the peaches.

In a medium size bowl, beat together 1 cup sugar and 1/2 cup softened butter until well combined. Add in 1 cup flour and 1 tsp baking powder and mix. Then mix in 1 egg and 1 tsp vanilla until the batter reaches the consistency of cookie dough.

Carefully spread batter over the peaches. Sprinkle additional sugar over the top of the batter before baking if desired.

Bake for 35-40 minutes or until crust is golden brown.

Check the Sweetness – Taste your peaches first. They may require sprinkling additional sugar over them before spreading the batter on top.

When to Serve – I recommend serving this cobbler the same day it’s baked.

How to Store – If you have leftovers, store in the refrigerator covered and gently reheat.

Don’t Overmix Batter – Stir the batter until just combined. Overmixing can make the topping dense instead of light and tender.

Serve Warm – I love serving this cobbler warm with a scoop of vanilla bean ice cream!

Peeling the Peaches – I recommend peeling the peaches. Peeled peaches are recommended for smoothest texture, but you can leave the skins on if you prefer a more rustic cobbler.

Fresh Peaches are Best – They provide the best flavor when in season, but frozen (thawed and drained) or canned peaches (drained) work well year-round.
