Chex Scotcheroo Clusters

I have a love, hate relationship with our air conditioner. I didn’t grow up with air conditioning. We were acclimated to heat and it didn’t bother us as kids. If we wanted to cool off we’d ride our bikes to the icy stand and eat shaved ice! Or we’d play downstairs where it was cooler.

What You’ll Need

6 cups Rice Chex

1 cup Light Corn Syrup

1 cup Peanut Butter

1/2 cup Sugar

1 cup Milk Chocolate Chips

1 cup Butterscotch Chips

How to Make Chex Scotcheroos

Pour 6 cups of Rice Chex cereal into a large bowl and set aside. Lay parchment paper out on the counter.

Combine 1 cup light corn syrup, 1 cup peanut butter, and 1/2 cup white sugar into a sauce pan and mix together over low heat and stir until just warm, not hot.

Pour mixture over cereal and mix to coat evenly.

Using a cookie scoop, drop clusters of the mixture onto the prepared parchment paper.

Allow clusters to cool.

Melt 1 cup milk chocolate chips and 1 cup butterscotch chips in a sauce pan over low heat, stirring frequently until melted and smooth.

Spoon mixture over clusters and divide evenly until the chocolate mixture is used up.

Allow to cool until firm.

Pro Tip: When you heat the corn syrup, peanut butter, and sugar together just heat it until warm, it doesn’t need to be hot. It only needs to be warm enough to mix together until smooth.
