Mini Egg Easter Cookie Bars

What You’ll Need

2 cups + 2 tbsp Flour

1/2 tsp Salt

1/2 tsp Baking Soda

3/4 cup Butter, Melted

1 cup Brown Sugar

1/2 cup Sugar

1 Egg

1 Egg Yolk

2 tsp Vanilla

1 cup Chocolate Chips

1 cup Mini Cadbury Eggs, Chopped

How to Make Mini Cadbury Egg Cookie Bars

Preheat oven to 325 degrees. Spray a 9 x 13 metal pan with non-stick spray and set aside.

In a small bowl, whisk together 2 cups + 2 tbsp flour, 1/2 tsp salt, and 1/2 tsp baking soda together.

In a separate medium bowl, beat together 3/4 cup melted butter, 1 cup brown sugar, and 1/2 cup sugar until well combined. Add in 1 egg, 1 egg yolk, and 2 tsp vanilla and mix.

Fold in dry ingredients. When half-way combined, add in 1 cup chocolate chips and 1 cup chopped Mini Cadbury Eggs. Continue to fold until just combined.

Press dough down evenly into the pan. Bake for 23 minutes.

Right after removing from the oven, press in additional chocolate chips and chopped Mini Cadbury Eggs (leaving a few whole) gently into the top of the cookie bars.
