How to Make Strawberry Cake Mix Cookies for Valentine’s Day
Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
Combine 1 package of Strawberry Cake Mix, 2 eggs, and 1/2 cup oil and mix well.
Scoop 1 1/2 tbsp size cookie dough balls and place onto prepared baking sheet, leaving room between the cookies.
Bake for 10 minutes. Let cool.
Melt 2 cups vanilla almond bark in 30 minute intervals, stirring between each interval, until smooth and melted.
Lay out a piece of parchment paper on the counter.
Dunk half of a cookie into the melted mixture. Lightly tap off extra and set on the parchment paper.
Sprinkle with Valentine sprinkles and let harden.

Do the cookies taste like cake or cookies?
They are the best of both worlds – soft and chewy like cookies, with a light cake-like texture.
How do I keep the cookies soft?
Don’t overbake them. They should look slightly underdone when you remove them from the oven and will firm up as they cool.
Do I need to chill the dough?
No. The dough is thicker than traditional cookie dough and bakes well without chilling.
Why are Strawberry Cake Mix Cookies perfect for Valentine’s Day?
Their natural pink color and sweet strawberry flavor make them feel festive and fun without needing food coloring or extra effort.
