Easy Lemon Poppy Seed Muffins
I’ve been trying to get more out of the recipes I share, so while I was working with these I decided to turn them into Lemon Poppy Seed Cupcakes !

What You’ll Need
1 box Yellow Cake Mix
1 (3.4 oz) box Instant Lemon Pudding Mix
1/2 cup Oil
4 Eggs
1/4 cup Poppy Seeds
1 cup Hot Water
How to Make Lemon Poppy Seed Muffins with Cake Mix
Preheat oven to 350 degrees. Line a muffin pan with liners.
Beat together 1 box lemon cake mix, 1 (3.4 oz) box instant lemon pudding mix, 1/2 cup oil, 4 eggs, 1/4 cup poppy seeds, and 1 cup hot water until well combined.
Fill muffin liners until almost full.
Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Moist crumbs are okay, you don’t want to over bake the muffins.
