Rhubarb Cake with Icing

When I opened the vanilla they got me I was overcome with the smell of REAL vanilla! I was shocked by how fragrant it was! I called a friend of mine right away to ask if she knew of this phenomenon and she’s been using it for years already. How am I just now finding out about this?!

What You’ll Need for the Cake

1 Egg

1 cup Sugar

1 cup Sour Cream

1/4 tsp Salt

1 3/4 cup Flour

1 tsp Baking Soda

1 tsp Vanilla

2 cups Rhubarb, Chopped

1/2 cup Walnuts

1/2 cup Brown Sugar

And the Icing

1 cup Powdered Sugar

1 tsp Vanilla

1 tsp Milk

How to Make Rhubarb Cake

Preheat oven to 350 degrees. Spray 9 x 13 pan and set aside.

Chop enough rhubarb to make 2 cups and set aside.

In a medium size bowl, cream together 1 egg, 1 cup sugar, and 1 cup sour cream.

In a separate small bowl, mix together 1 3/4 cup flour, 1/4 tsp salt, 1 tsp baking soda.

Pour dry ingredients into the wet and combine well. Add chopped rhubarb to the batter and mix.

Pour into the prepared pan and spread evenly.

Sprinkle 1/2 cup chopped walnuts and 1/2 cup brown sugar over the batter evenly.

Bake for 35 minutes.

Make icing by combining 1 cup powdered sugar, 1 tsp vanilla, 1 tbsp milk then drizzle over the cake.
