How to Make Fresh Rhubarb Pie Filling

In a separate bowl, combine 1 1/4 cup sugar, 1/4 cup flour, and a dash of salt. Toss rhubarb in the mixture and let stand for 15 minutes.

Fill the crust with the mixture.

Top mixture with a few dots of butter.

Brush edges of pie crust with water. Place top crust over filling.

Press edge of crust together with a floured finger or press together with a fork. Trim off extra.

Brush the top crust with melted butter. Sprinkle sugar on top. Cut slits in the top of the pie.

Bake at 400 for 25 minutes.

Boiling Over – To avoid a mess if the pie runs over in the oven, put a large piece of foil (shiny side up) under the pie.

Even Cooling – Place the pie on a cookie rack after removing from the oven to allow even cooling.

Crisco – If you’d prefer, you can substitute the Crisco with butter.

Serving – Allow the pie to completely cool before cutting and serving. This gives it time to set.
