Ooey Gooey Cinnabon Cake

It was on one of those shopping trips that I had my very first Cinnabon. We would rotate through our favorite treats – a pretzel with cheese, a Cinnabon, or an Orange Julius smoothie. Remember those?! Things sure have changed over time.

I will never, ever forget the first bite of Cinnabon I had! The first bite was so ooey and gooey – it was heavenly! This Cinnabon Cinnamon Roll Cake tastes like a cinnamon roll, but in cake form!

What You’ll Need for the Cake

3 cups Flour

1 cup Sugar

4 tsp Baking Powder

1 1/2 cups Milk

2 Eggs

2 tsp Vanilla

4 tbsp Salted Butter, Melted

For the Cinnamon Sugar Swirl

1 cup Salted Butter, Softened

1 cup Brown Sugar

1 tbsp Cinnamon

And for the Icing

2 cups Powdered Sugar

4-5 tbsp Milk

1 tsp Vanilla

How to Make Cinnabon Cinnamon Roll Cake

Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.

In a large bowl, mix together 3 cups flour, 1 cup sugar, 4 tsp baking powder, 1 1/2 cups milk, 2 eggs, and 2 tsp vanilla. Once well combined, add in 4 tbsp melted salted butter. Pour batter into the prepared pan.

Using the same bowl, mix together 1 cup softened salted butter, 1 cup brown sugar, and 1 tbsp cinnamon. Drop evenly over the cake batter and swirl all over the cake with a knife. Note: Using the knife, swirl deep into the batter and up to the edges of the pan to make sure you have good coverage.

Bake for 25-28 minutes.

While the cake is baking, make the glaze by whisking together 2 cups of powdered sugar, 4-5 tbsp milk, and 1 tsp vanilla. Whisk until smooth and drizzle over the warm cake.

Swirling – Using a knife, swirl deep into the batter and up to the edges of the pan to make sure you have good coverage.

Milk Substitute – Soy or almond milk works well in place of the milk.

Don’t Over Bake – Check the cake at 25 minutes. A toothpick inserted into the center of the cake should come out clean, but moist crumbs are okay.

Drizzle – Drizzling the icing over the warm cake will cause the cake to randomly collapse. That’s okay, it combines beautifully with the cinnamon sugar swirl perfecting the ooey gooey part of the cake!
