Rhubarb Cake with Vanilla Sauce

What You’ll Need for the Cake
2 tbsp Butter, Softened
1 cup Sugar
1 Egg
2 cups Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1 cup Buttermilk
2 cups Rhubarb, Chopped
The Streusel
1/2 cup Flour
1/2 cup Sugar
4 tbsp Butter, Melted
And the Warm Vanilla Sauce
1/2 cup Butter
3/4 cup Sugar
1/2 cup Evaporated Milk
1 tsp Vanilla

Rhubarb Streusel Cake with Warm Vanilla Sauce
Preheat oven to 350 degrees. Spray a 9 x 9 pan with non-stick spray and set aside.
In a large bowl, cream together 2 tbsp softened butter and 1 cup sugar. Beat in 1 egg.
In a small bowl, whisk together 2 cups flour, 1 tsp baking powder, and 1/2 tsp baking soda. Pour into the creamed butter and sugar. Pour in 1 cup buttermilk and beat together until just combined.
Fold in 2 cups chopped rhubarb.
Spread batter evenly into the pan.
In a small bowl, make the streusel by mixing together 1/2 cup flour, 1/2 cup sugar, and 4 tbsp melted butter until crumbs form. Sprinkle evenly over the batter.
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Make the sauce by melting 1/2 cup butter in a saucepan over medium heat. Add in 3/4 cup sugar, 1/2 cup evaporated milk, and 1 tsp vanilla. Bring to a boil and stir constantly until slightly thickened.
Remove from heat and serve warm over the cake.
