Easy Crepes

Thin delicate pancakes that are soft with slightly crispy edges! You can stuff them with your favorite sweet or savory fillings!

Basic Crepe Recipe

When I was a kid, my very favorite breakfast food was ‘thin pancakes,’ but the actual name for them is Crepes!

I’ve only made them once in a while over the years because they can be pretty time consuming to cook. The batter is easy to make, and the pancakes themselves are easy to cook… but it takes a while to make so many of them.

However, I recently came across a Crepe Maker , which I quickly discovered is a game changer! It’s one of those gadgets you wonder if they advertise better than it actually works. I was skeptical, but once I tried it I was in love! I mass produce Crepes super fast now, so we’ve been having them a lot more often!

I can’t take credit for this great recipe, I found it over at I Heart Naptime!

What You’ll Need for the Crepes

2 cups Milk

4 Eggs

3 tbsp Butter, Melted

1 tbsp Sugar

1 tsp Vanilla

1 1/2 cups Flour

And the Cream Cheese Filling

1 (8 oz) Cream Cheese, Softened

1/4 cup Powdered Sugar

1 tsp Vanilla

1 cup Whipped Cream, Store Bought from Can

How to Easily Make Crepes

In a blender, combine 2 cups milk, 4 eggs, 3 tbsp melted butter, 1 tbsp sugar, 1 tsp vanilla, and 1 1/2 cups flour. Blend until the batter is smooth.

Refrigerate for 30 minutes.

Heat a 8″ frying pan over medium heat. Pour 1/4 cup batter into the pan, tilting pan right away from side to side to form a circle.

Cook for about a minute per side, or until lightly browned. Remove from heat and stack until ready to serve.

And the Cream Cheese Filling

Beat together 1 (8 oz) softened cream cheese, 1/4 cup powdered sugar, and 1 tsp vanilla until smooth and creamy.

Add in 1 cup store bought whipped cream from the can and beat until just combined.
