Easy Vegetarian Egg Bake

There is not a day that I wake up and don’t feel grateful for my life. I am blessed beyond all measure! Even though I’ve had hard days and hard years, I have always had my faith, my family, and my friends.

What You’ll Need

2 Impossible Bratwurst Sausage Links

1/2 Green Pepper, Diced

1/2 Red Pepper, Diced

1 medium Onion, Diced

12 Eggs

1/4 tsp Salt

1/2 cup Milk

2 cups Cheddar Cheese, Shredded

How to Make a Vegetarian Egg Bake

Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.

Heat a skillet over medium heat and add 2 Impossible Bratwurst’s. Break into pieces and brown. Set aside.

In the same skillet, saute 1/2 diced green pepper, 1/2 diced red pepper, and 1 medium diced onion until soft.

In a large bowl, whisk together 12 eggs, 1/4 tsp salt, and 1/2 cup milk. Stir in browned meat and sauted mixture. Then stir in 2 cups shredded cheddar cheese.

Pour into prepared pan and bake for 35 minutes. The edges should be set and the center barely jiggly.
