Old Fashioned Gingersnap Cookies
I’m not sure how we went from getting our kids ready for a new school year to feeling like Christmas is closing in on us, but here we are. I always say the holiday’s came out of nowhere. But they come the same time every year, so I’m not sure why I am so shocked when they get here!
Oh well, I can’t spend too much time regretting my delay – we have Christmas to plan for! Let’s kick off the holiday season with these traditional Gingersnap Cookies! And if you are really getting into the spirit, try making a batch of Peanut Brittle or 2-Ingredient Peanut Butter Cup Christmas Cookies , too!

What You’ll Need
3/4 cup Shortening
1 cup Brown Sugar
1 Egg
1/4 cup Molasses
2 1/4 cup Flour
1 1/2 tsp Baking Soda
1 tsp Cinnamon
1 tsp Salt
1/4 tsp Cloves
1/4 cup Sugar

How to Make Gingersnap Cookies
In a large bowl, cream together 3/4 cup shortening and 1 cup brown sugar.
Add in 1 egg and 1/4 cup molasses and beat together well.
Then add in 2 1/4 cup flour, 1 1/2 tsp baking soda, 1 tsp cinnamon, 1 tsp salt, and 1/4 tsp cloves and beat until well combined.
Cover the dough and refrigerate for 1 hour.
Remove from refrigerator and preheat oven to 375 degrees. Pour 1/4 cup sugar into a small bowl and set aside.
Scoop 2 tbsp size cookie dough balls and roll into sugar. Place onto prepared baking sheet, leaving room between the cookies.
Bake for 10-12 minutes.
