Chocolate Mint Cookies
It seems like every time I try to have something nice, it’s not so nice. In the past couple of week’s, I’ve bought a new rug for our entry way and new stools for our kitchen island.
When I first got the rug, every time I walked by I had to adjust it because it wasn’t lining up with the tile where I wanted it. I was going bonkers over this! Turns out one side of the rug is shorter than the other.
Why me?! Why can’t things just ever seem to go as I hope they will?! And why do the easiest things somehow turn into more things on my to-do list?! Sigh.

What You’ll Need
1 box Chocolate Cake Mix
2 Eggs
1/2 cup Oil
1 cup Mint M&M’s
How to Make Mint Chocolate Cake Mix Cookies
Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
In a large bowl, mix together 1 box chocolate cake mix, 2 eggs, and 1/2 cup oil.
Stir in 1 cup mint M&M’s.
Scoop 2 tbsp size cookie dough balls and place onto prepared baking sheet, leaving room between the cookies.
Bake for 9-10 minutes. After removing from the oven, place additional M&M’s in the tops of the cookies before allowing to cool.
