Ingredients You’ll Need
1 2/3 cups Flour
1/2 tsp Baking Soda
1/4 tsp Salt
1/2 cup Butter, Softened
1/2 cup Brown Sugar
1/4 cup Sugar
1 Egg
1/2 tsp Peppermint Extract
1/2 cup Chocolate Chips
1/2 cup Mint Chips
1/2 cup Andes Baking Chips

How to Make Mint Chocolate Chip Cookies
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
In a small bowl, whisk together 1 2/3 cups flour, 1/2 tsp baking soda, and 1/4 tsp salt. Set aside.
In a large bowl, beat together 1/2 cup softened butter, 1/2 cup brown sugar, and 1/4 cup sugar until fluffy. Add in 1 egg and 1/2 tsp peppermint extract.
Gradually beat in the flour mixture until well combined.
Fold in 1/2 cup chocolate chips, 1/2 cup mint chips, and 1/2 cup Andes Baking Chips until just combined.
Place heaping 1 1/2 tbsp size scoops of cookie dough on the prepared baking sheet, leaving room between the cookies to spread.
Bake for 9-11 minutes, until the edges are just beginning to turn golden brown and the center is still slightly underdone.
Press in additional chocolate chips, mint chips, and Andes baking chips into the tops of the cookies right after removing from the oven.

What gives mint chocolate chip cookies their mint flavor?
The mint flavor comes from the peppermint extract. A little goes a long way – too much can overpower the cookies.
Do I need to add green food coloring?
No, it’s not necessary. It would take away from the pop of color from the green of the mint chips.
Why did my cookies turn out dry?
Overbaking is the most common cause. Remove the cookies when the edges are set but the center still look slightly soft.
Are Mint Chocolate Chip Cookies only for the holidays?
Not at all! While popular around Christmas and St. Patrick’s Day, they are great year round for anyone who loves mint and chocolate.
Can I freeze cookies?
Yes! You can freeze the baked cookies or the dough balls in a freezer safe bag or container for up to 3 months. Dough can be baked straight from the freezer – just add 1-2 minutes to the bake time.
