Peanut Butter Banana Brownies
These Vegan Peanut Butter Banana Brownie Bites are a variation of my Vegan Peanut Butter Banana Brownies . My readers love these! It’s the exact same recipe, except using a muffin pan instead of a 9 x 9 pan.
I am really starting to wonder if I am part Elvis with as many peanut butter and banana recipes I’ve been sharing. What can I say? I always seem to have bananas going bad so I can make Peanut Butter Banana Oatmeal Cups for breakfast, Hulk Spinach Banana Muffins for packed lunches, and Banana Crumb Cake for potlucks!

What You’ll Need
2 Over Ripe Bananas
1 cup Sugar
1/2 cup Vegan Butter, Melted
1 tsp Vanilla
3/4 cup Flour
1/8 tsp Salt
1/4 cup Cocoa Powder
1/2 cup Creamy Peanut Butter
1/2 cup Mini-Vegan Chocolate Chips

How to Make Vegan Peanut Butter Banana Brownie Bites
Preheat oven to 350 degrees.
Line a muffin pan with muffin liners and spray liners.
In a bowl, use a fork to mash 2 over ripe bananas. Add 1 cup sugar, 1/4 cup melted vegan butter, and 1 tsp vanilla extract. Whisk until combined.
Add 3/4 cup flour, 1/8 tsp salt, and 1/4 cup cocoa powder. Whisk until well combined.
Divide evenly between the 12 muffin liners.
Soften 1/2 cup peanut butter in the microwave in 5 second increments, stirring until softened. Use a spoon to add dollops of peanut butter onto each brownie bite, distributing evenly, and swirl into the batter.
Sprinkle with mini-vegan chocolate chips.
Bake for 25 minutes.
Allow brownie bites to cool in the pan for a few minutes before removing.
