What You’ll Need
1/2 pound Rotini Pasta
1 Cucumber, Thinly Sliced
1/2 Sweet White Onion, Thinly Sliced
1/2 cup Sour Cream
1/2 cup Mayonnaise
1 tsp Sugar
1/2 tsp Salt
2 tbsp Dill
2 tbsp White Vinegar
How to Make Creamy Cucumber Pasta Salad
Cook 1/2 pound rotini pasta to al dente according to the package directions, then rinse under cold water.
Cut cucumber in half lengthwise and remove seeds using a spoon. Cut into thin slices and set aside.
Thinly slice 1/2 sweet white onion and soak in a bowl of cold water.
Whisk together 1/2 cup sour cream, 1/2 cup mayonnaise, 1 tsp sugar, 1/2 tsp salt, 2 tbsp dill, 2 tbsp white vinegar in a small bowl.
Toss all ingredients together in a large bowl and let keep in the refrigerator for 45 minutes before serving.
