Healthy Blueberry Oatmeal Crumble Bars

Part of what I do to maintain a healthy blog is update old pictures and content. So I am always looking back at my older posts to see what I can do to refresh them.

I originally posted this recipe for Blueberry Oatmeal Crumble Bars when I was still working a ‘normal job’ with a little one that I so desperately wanted to be home with. I am leaving what I originally wrote as a reminder that God hears my prayers and to be patient while He works in my life…

I’ve been enjoying mid-day walks in the fresh air at a near-by park. It’s a beautiful path that weaves around a baseball diamond, through the woods and rivers, around a small pond, and over a wooden planked bridge. The birds are so active and cheerful, the frogs have been croaking, and I can hear the laughter of little ones coming from the park.

The outdoors is my happy place!

Life is full of unanswered questions and it’s easy to keep them on repeat, asking ourselves over and over why things are the way they are. I’ve found the easiest way to cope is to trust God’s plan for my life. When everything is going our way it’s easy to let go of our worries, wonders, and why’s. But there are times I feel like I am standing on shaky ground and start to question God’s plan and His delayed answers to my prayers. So it is my prayer that He works everything together for good, even when it doesn’t feel so good at the time!”

And now, I am living this answer to prayer. Praise the Lord! He has been so good to me and blessed me beyond all measure! His timing is always perfect!

I absolutely love this recipe! Every time I make it I want to make it again, but just the crust. The crust itself is so good! If you like this, then I think you will like Peach Crisp , Easy Blueberry Crisp , and Rhubarb Crisp , too!

What You’ll Need for the Crust/Crumble

1 1/2 cups Flour

1 1/2 cups Old Fashioned Rolled Oats

1/2 cup Honey

1/4 cup Brown Sugar

1/2 tsp Cinnamon

6 tbsp Butter, Melted

1 tsp Vanilla

And the Blueberry Filling

2 1/2 cups Fresh Blueberries

2 tbsp Lemon Juice

2 tsp Corn Starch

1/4 cup Sugar

How to Make Blueberry Oatmeal Crumble Bars

Preheat oven to 350 degrees. Spray a 8 x 8 pan with non-stick spray and set aside.

To make the crust/crumble, mix together 1 1/2 cup flour, 1 1/2 cups old fashioned rolled oats, 1/2 cup honey, 1/4 cup brown sugar, and 1/2 tsp cinnamon.

Stir in 6 tbsp melted butter and 1 tsp vanilla into the mixture. Mix until well combined. Reserve 1 cup of the crust/crumble mixture and set aside; this will be used to crumble on top.

Press the crust mixture evenly into the prepared pan.

Using the same bowl, combine 2 1/2 cups fresh blueberries, 2 tbsp lemon juice, 2 tsp corn starch, and 1/4 cup sugar. Mix well. Place the blueberries over the crust evenly.

Sprinkle the reserved 1 cup of crust/crumble mixture over the top of the blueberries.

Bake for 45 minutes.
